We come from a culture where food is never just food.
It is how we celebrate, how we gather, how we care for one another.
XaMan was created to honour those traditions and share them with our new home in Canada.
XAMAN is an offering to those who cooked before us.
To the hands that preserved flavour, memory and tradition through fire, corn, and time.
We cook to honor our past — our grandparents, our mother, our roots, and the country that shaped our soul. Every tortilla, every sauce, every aroma carries the echo of a home, a story, a shared table.

We are children of maize in Northern lands.
Migrants of memory and fire. Bringing with us the wisdom of the milpa, the smoke of the comal, and the spirit of Mexican hospitality.
At Xaman, cooking is remembrance. Sharing is illumination. Food becomes a bridge to reconnect with the soul. We honor this land with gratitude and respect, embracing its seasons, its people, and the opportunity to continue telling our story far from home, yet deeply connected to who we are.

Botanitas, ritual bites
XaMan Guacamole
Fresh avocado, lime, cilantro oil, tortilla ash, pepitas, served with corn chips.
Huitlacoche Corn Ribs
Roasted corn ribs glazed with huitlacoche and truffle butter, served with smoky ancho Chile jocoque.
Sopitos Pibil
Trio of corn sopes layered with slow braised cochinita pibil, black beans and citrus pickled red onion.
Charred Aguachile
Blanched shrimp, charred green tomatillo, serrano pepper, avocado cream, tortilla ash, corn tostadas.
Main Rituals
Grill Zarandeado Fish
Local white fish, bean taco, pico de Gallo, salsa and grilled lime. Only the palapa is missing.
Mushroom Barbacoa Tetelas
Two Tetelas filled with slow-cooked mushrooms barbacoa, served with salsa martajada, herb crema, cactus and pickled onions.
Duck Adobo Tamal
House-made duck tamal with adobo, served with cabbage salad and light mole rojo.
Carne Asada Tacos
Grilled rib eye & house-made corn tortillas, avocado mousse, frijoles de la olla, salsa martajada, and blistered shishito peppers.
Chile Relleno
Roasted poblano pepper stuffed with huitlacoche and esquites, served with creamy squash sauce, herbs and ash tortilla.

Warm corn bread, ricotta ice cream and dulce de leche.

Vegan horchata panna cotta, hibiscus-macerated strawberries & toasted sesame praline.
