We come from a culture where food is never just food.
It is how we celebrate, how we gather, how we care for one another.
XaMan was created to honour those traditions and share them with our new home in Canada.
XAMAN is an offering to those who cooked before us.
To the hands that preserved flavour, memory and tradition through fire, corn, and time.
We cook to honor our past — our grandparents, our mother, our roots, and the country that shaped our soul. Every tortilla, every sauce, every aroma carries the echo of a home, a story, a shared table.

We are children of maize in Northern lands.
Migrants of memory and fire. Bringing with us the wisdom of the milpa, the smoke of the comal, and the spirit of Mexican hospitality.
At Xaman, cooking is remembrance. Sharing is illumination. Food becomes a bridge to reconnect with the soul. We honor this land with gratitude and respect, embracing its seasons, its people, and the opportunity to continue telling our story far from home, yet deeply connected to who we are.
